The best is called "SHG" (Strictly High Grown) and it means that is grown at an altitude higher than 1,200 meters. As in Guatemala and Costa Rica coffee is classified according to the altitude of the plantations: high as the altitude, the better the quality. Aroma velvety and enveloping, with a delicate hint of chocolate, is the ideal coffee for breakfast.

Every family, for thousands of years, goes into the forest, collect cherries, dried in the sun on loungers suspended, the tough, ground them in a mortar and offered coffee to guests following an ancestral ceremony, a solemn rite, with a strong symbol of respect and hospitality. The territory of Huehuetenango, in the north-west part of Guatemala, on the border with Mexico, an altitude ranging from 850 to 3700 meters and offers an extraordinary variety of ecosystems (from subtropical forest to the pine forests). Located at the foot of the Cuchumatanes, the highest non-volcanic mountains of Central America, Huehuetenango is one of the best areas of the country for the cultivation of coffee. There are different cru in the Huehuetenango area, everyone had the morphological characteristics and microclimate of the valleys in which are situated the communities involved in the project. The common features of this coffee are a full body and good acidity.
